Lemon Poppyseed Muffins
Ingredients1/2 cup of steviacane® 2 cups of all-purpose flour 1 cup of buttermilk 1/2 cup of unsweetened applesauce 1 egg 1 tablespoon of lemon zest, or zest of one lemon 1 large lemon, juiced 1 teaspoon of vanilla extract 1 teaspoon of baking soda 1 teaspoon of baking powder 1/4 teaspoon of salt 2 tablespoons of poppyseeds |

Directions1. Preheat oven to 350°F. Line a muffin tin or spray with nonstick spray. 2. In a large bowl, mix together applesauce, egg, buttermilk, steviacane, vanilla, lemon juice from the lemon and lemon zest. 3. Whisk together all-purpose flour, baking soda, baking powder, salt, and poppyseeds and stir into the wet mixture until just blended. 4. Divide into muffin tins and bake for 12 to 18 minutes or until an inserted toothpick comes out clean. 5. Once mostly cooled, glaze with powdered sugar mixed with milk and a slice of fresh lemon if desired. Serves: 12 Courtesy of Steviacane®. Enjoy another stevia recipe.
