Spiced Rice Pudding


Raisins
1 ¾ cups water
¼ cup spiced rum
24 sticks (1/4 cup) PureVia™ sweetener
1 cup raisins
½ teaspoon ground cinnamon

Rice
1 cup uncooked short grain rice
3 1/2 cups soy or low fat milk

Prep Time: 10 min
Makes: 6 cups

Directions


  1. In large saucepan, heat water to boiling; remove from heat. Add rum, Purevia, raisins and ½ teaspoon cinnamon; stir well. Let mixture stand 1 hour.
  2. Meanwhile, combine rice and milk. Heat to boiling; reduce heat to low. Cover and cook, stirring frequently, 15 to 20 minutes or until rice is tender.
  3. Remove from heat. Using slotted spoon, stir raisin mixture and 2 to 3 tablespoons of the syrup into cooked rice. Serve warm.

Short grain rice, such as Arborio, is higher starch than other kinds of rice and cooks to a creamy texture.
